These muffins are a delicious and nutritious treat, packed with protein and fibre. Perfect for a healthy snack or breakfast!
Ingredients

30g Fat Cow Vanilla protein powder

1 egg (approximately 50g)

3g baking powder
-
20g porridge oats
-
4ml almond milk or any milk

1 banana (approximately 65g), mashed
-
100g raspberries
-
5g desiccated coconut
Directions
In a bowl, mix the mashed banana, protein powder, egg, baking powder, porridge oats, and milk until well combined. Gently fold in the raspberries.
Pour the batter into silicone muffin molds. Bake in the oven at 190°C (374°F) for 20 to 25 minutes, or until the muffins are cooked through.
Once baked, sprinkle the remaining desiccated coconut on top while the muffins are still warm.
