These Lemon Mini Loaves are a delightful, protein-packed treat with a tangy lemon flavour. They’re perfect for a nutritious snack, breakfast, or light dessert, and are easy to make with excellent nutrient density.
Ingredients

1 egg (50g)

60g banana

2g baking powder

25ml almond milk

25g porridge oats

30g Fat Cow Vanilla protein powder

2ml lemon extract

A couple of sprays of Fry Light cooking spray

50g lemon cheesecake protein yogurt
Directions
In a bowl, mix together the egg, banana, lemon extract, baking powder, almond milk, porridge oats, and vanilla protein powder until well combined.
Preheat your oven to 180°C (356°F). Spray your mini loaf tray or silicone mold with Fry Light cooking spray, ensuring the oil is evenly distributed.
Divide the batter equally into the three mini loaf sections of your tray or mold. Bake in the preheated oven for about 20 minutes, or until a knife inserted into the center of the loaves comes out clean.
Allow the loaves to cool slightly before removing them from the tray. Top each mini loaf with a dollop of lemon cheesecake protein yogurt.
