Satisfy your sweet tooth while packing in the protein with these delicious crepes. Perfect for breakfast, dessert, or a post-workout treat!
Ingredients

15g plain flour

30g Fat Cow Vanilla protein powder

1 medium egg (around 50g)

115ml almond milk (or any milk of choice)

100g chocolate protein pudding

100g raspberries

Cooking spray oils for cooking

0.5g icing sugar for topping (optional)
Directions
In a bowl, whisk together the egg and almond milk until well combined. Gradually add the flour and protein powder to the egg mixture, whisking continuously to avoid lumps. The batter should be smooth.
Heat a non-stick pan over medium heat and lightly coat it with cooking spray. Pour a thin layer of the batter into the pan, swirling to cover the bottom evenly.
Cook for 1-2 minutes on each side until golden brown and set. Repeat with the remaining batter to make a second crepe.
Fill each crepe with half of the chocolate protein pudding and half of the raspberries. Fold or roll the crepes and place them on a serving plate.
Optionally, dust the crepes with a light sprinkle of icing sugar for added sweetness.
Recipe Note
For an even better texture, you can let your pancake batter rest in the fridge for 10-15 minutes before cooking.
